[native] [20/34] ReactNav6: add defaultScreenOptions to NavigatorProps

Summary:
Sourced from TypeScript types here.

TypeScript doesn't seem to be catching that createStackNavigator is passing this to StackView, though... otherwise it would note that defaultScreenOptions isn't in StackView's types here or here.
